Need a tasty side dish for a party? We use this egg-free Broccoli Salad a lot as a side dish. It is not only healthy but also delicious. Broccoli Salad pairs well with bbq meats, burgers, chicken and sandwiches. For someone with an egg allergy, it makes a great alternative to potato and macaroni salads that are loaded with eggs. It’s great in the summer since it is made with eggless mayo no worries about it going bad in warmer temps.
To make Broccoli Salad you will first need to make the dressing. This consists of eggless mayonnaise, sugar, and vinegar whisked together until combined. (Sorry I did not get photos of all the steps for this post.)
Then you will chop the broccoli and red onion. Once chopped put the broccoli, onion, grated cheese and crumbled bacon in a large bowl. Pour the dressing over this and toss until evenly coated.
You can serve this salad right away, but I find it tastes better if it is chilled for a few hours to allow all the flavors combine.
Broccoli Salad (egg-free)
Tangy broccoli salad made with eggless mayonnaise.
- 1 cup eggless mayonnaise I use Just Mayo brand
- 1/4 cup sugar
- 2 tbsp vinegar
- 1 head broccoli chopped
- 1/2 cup red onion chopped
- 1 cup finely grated cheddar cheese
- 1/2 lb. bacon cooked and crumbled (or use real bacon crumbles)
In a large bowl blend eggless mayonnaise, sugar, and vinegar until smooth.
Add chopped broccoli, red onion, cheese and bacon crumbles and toss with the dressing until coated. Cover bowl and refrigerate overnight so flavors combine.
